BioI'm always so frustrated when people use tofu only as a substitute for something else--meat, eggs, dairy, or even, heaven forbid, MAYONNAISE--and completely ignore its merits as an ingredient (one with over two thousand years of history, no less) in and of itself.
This journal exists solely as an archive for recipes that appreciate tofu as tofu. There will be mostly traditional Asian recipes posted, but I might occasionally feature something a little more removed from the mainstream. The key is that tofu will always be featured and appreciated in every recipe the way it's meant to be.
If you cook with tofu as it's meant to be cooked, it will taste good. Be good to it, and it will be good to you.
